Growing up in a family passionate about food, it’s not surprising that Jordan Michel
Fabiano inherited that culinary enthusiasm in spades.
Born into a big Italian/American family where his mother and paternal grandmother were
known for cooking huge meals for extended family and friends, Jordan was always in
the kitchen helping.
His first memories of cooking by himself were making bruschetta after school or
inventing new pasta dishes for dinner with the family. While others in home economics
were learning cooking basics, Jordan was whipping up bread pudding with bourbon
glaze or doing a deep dive into sushi making.
Throughout the time he worked at his father’s software development company, there
was a constant yearning to be in the culinary field. So when the business closed,
Jordan worked for several years on the Cousins Maine Lobster food trucks, Hudson
Grill and Hudson FC, working his way up from dishwasher to management positions.
While managing at Hudson FC, Jordan would drive by The Alden daily. Hearing about
the high level of globally inspired cuisine that Chef Jared Hucks was serving nightly, he
had a burning curiosity and decided to book a reservation. What he experienced there
was “eye-opening.” The creativity, flavors, dish composition, cleanliness and
organization of the open-air kitchen was like nothing he had ever seen.
One year passed before he contacted Chef Jared and ultimately showcased not only his
culinary talent, but his strong work ethic, and earned himself a position at the bottom of
the brigade. This is when he began learning the fundamentals of The Alden’s world
class cuisine.
Unfortunately, the pandemic caused a wrinkle in this process, but he stayed on at The
Alden to prepare meals for first responders alongside Chef Jared. Once restaurants
reopened for service, Jordan continued his rise through the ranks in The Alden’s
kitchen, from mastering all food stations to being named Sous Chef and ultimately, Chef
de Cuisine, a position he’s held for the past two and half years.
As Chef Jared creates a culture of creativity and collaboration at The Alden, Jordan has
passionately impacted the space through his artistic and experimental ingenuity. A
budding painter, Chef Jordan is inspired by local products to create artfully presented
dishes for the ever-evolving menu at The Alden.
